Well, aside from a few, I agree with your FMA casting choices. Here's who I'd pick for the characters you didn't cast.
Father/Hohenhiem- Rhys Ifans (Doctor Connors from "The Amazing Spider-Man").
Fuhrer Bradley- Robert Downey Jr (I know he's usually type-casted as good guys, but that's what makes him such a good choice in my opinion. You wouldn't expect Iron Man to be a bad guy. His Tony Stark can be eccentric and serious, kind of like Bradley).
Shou Tucker- Jeffrey Combs (the doctor from "Re-Animator").
Sloth- Tyler Mane (Sabertooth from "X-Men").
Gluttony- Motion Capture with Andy Serkis (Gollum from LOTR).
