i do this with photoshop. i mark the objekts which i want to make black an white, and reduce the colorsaturation of this choice.
a other way is to make a mask at photoshop in a new layer and reduce there the colorsaturation.
sry my english is very bad and i donΒ΄t know the englisch terms for the german ps features... perhabs on youtube, there is a tutorial about the colorkey effekt. i only know a video on fototv.de., but this is german...
