Hello. I saw your Equestria Girls Human Version. I totally agree with you. I always imagined that Celestia is dark skin as it makes sense and Luna is light skin. Dash and AJ are tan due to being outside a lot. Pinkie Pie's family is Amish.
For me personally if not using the EG Version and using Real world Ethnicity for the Main Six, Rainbow Dash's Family is Korean Mix, Rarity and Sweetie belle's Family is mixed Race, Shining Armor and Twilight's is African Asian, Pinkie pie's family is Amish, The Apple family are Texans,
Not sure about Fluttershy and Zephyr Breeze's family yet.
I have no issue with your version of the Main 6, Trixie and Celestia and Luna. I do agree with Twilight's Nerdy look which is good for the first 2 seasons but Twi has grown a lot since she is now a hands (Hooves) on type of Princess.
