The best way to go about it as far as accepting commissions goes is to ask for half the money upfront and then the remainder when the work is completed. When the work is completed you send the commissioner a low-res copy of the work with a watermark on it. They only get the high-res copy without the watermark when they send the rest of the payment.

I'm wary about paying the full amount upfront as I've had an artist try to scam me, I only got the art when I outed her on [link] Turned out she'd been using the money sent to pay her rent and thought her watchers would be OK with this (some of them were OK with this and were butthurt that others didn't have the same 'principles' as them)
