The reason Loki cares is because the Tessact is influencing him to do these evils things, and a part of him doesn't WANT to! And when does do 'em, it wasn't thrilling. Β

That, and the fact that the Mind Gem's in his possession. Β The Mind Gem controls the minds of both its wielder(s) (Loki) and victims (Hawkeye and the doctor guy). Β Thanos knew about the Mind Gem's abilities, and he thought Loki was the perfect candidate for it.Β

Don't fret, I didn't figure it out either, until much later when I watched Guardians of the Galaxy (coughalsolookedituponlinecough).
They mention the Infinity Gems in GotG, it's the scene when they meet the Collector.
