The thing I love about Ghibli movies is that their couples spring from love that is chaste and true, at least that is what I think.
For Spirited Away, Chihiro could have been terrified of everything, but managed to make a friend in Haku, in which she vows to help him as he did her. A simple meeting, and a friendship is formed.
Howl and Sophie, I guess it was by chance, aside the infamous walking on air scene. Howl appreciates Sophie beneath the old lady guise she has to sport, because of the Wicked Witch, as well as Sophie trying to find out the mysteries of Howl and his magic, insisting on staying by him, even though he goes through dangerous tasks. (Can't really have a solid interpretation of this pair, but it seems interesting enough.)
San and Ashitaka. Ashitaka tries to bridge the divide between man and nature, whilst San is basically a human living in the arms of nature. Their common goal, somewhat, is to alleviate war between both parties. Ashitaka is the first person who appreciates her as a girl, not as a beastly child living in the forests. As such, San sees Ashitaka as the first human she could trust. A bond is formed from there. (San willing to chew through meat to provide Ashitaka with nutrients. Solid trust there.)
