The hard part isn't defeateing the Urban Collosus: it's luring it to wear you need it to be so that the city formed from its carcass will be properly connected to trade routes and supplied by agriculture. Otherwise no-one will live in it, they'll just expand successful towns until they become cities, and who wants that?
