I am frankly astounded by Toriyama not being interested in many of the things we want to see become canon. For example, SSJ3 Vegeta or even Gogeta becoming canon.

Vegeta could clearly see how useless Super Saiyan 3 actually is, it has too much of a drain with not enough of a power boost, and so he didn't care for the form's ability. Gogeta is highly unlikely to happen because Vegeta, even in the worst of times, will not let his pride go to such a low.

Gogeta could become canon if Vegeta haveΒ΄nt refused the idea while fighting Super Buu in his body or at least if that scene is filler

That scene is not filler, Goku in fact did canonically ask to do normal fusion with Vegeta.
And in many cases, Vegeta will decline, because it was a step too low for his pride.
