Although I do wonder how many books there are, I'm betting on 3. Remember, Dipper states that in the 3 book "After a certain point, the pages just stop", which indicates that whoever was writing it died, and otherwise had something horrible happen to them, and were unable to finish the journal.

By the way, am I correct in assuming that each journal contains 2-3 years of the authors exploits? The 3 book states that "It's been 6 six years since I started studying Gravity Falls", so I'm assuming that each book covers about 3 years. What do you think?
