It's a common belief that came from Europe, the mice and rats made nests in old storehouses of peoples' homes and would normally eat the salted meats or grains, but ifΒ there is very little else to eat, or they can't get to the other foods,Β a mouse will rarely eat cheese.
The reason is the smell, Imagine an aged cheese and how strong it smells. Now Imagine you're a mouse with a very sensitive sense of smell and how much stronger the smell of the cheese would be.
