I like the new designs and you really suited them with their new personalities. Though I expected Flutters hair being more poofier and bouncier, I really liked Rainbow's hairstyle (it's so wavy and belongs to a shy and caring pony) and Applejack's. It's fashionable, but still country. I like it, that you involved the fashionable hat from "Best Gift Ever" in your AU. 
Do you also have new names for them, since the old ones don't fit their personalities anymore.

If you don't mind, I have some suggestions for you. It's up to you, whether you take them or not, because it's your AU and I don't force you to anything.
1) Applejack = Apple Seed or Applejewel
Well, I thought Apple Seed could be a good one, because I thought of Babs Seed, who lives in Manehattan. And Applejewel is just her "self created" name from "Simple Ways".
2) Rainbow Dash = Rainbow Breeze, Rainbow Harmony, Pastel Dash
I thought of the Breezies, when the name Rainbow Breeze popped up into my mind and so I found, that name could suit her new personality. So, when she has the adjective "breeze" in her name, it's usually something soft and tender. Rainbow Harmony is actually a canon name and it's the filly, that was helped by Cozy Glow at the School of Friendship (I don't know, whether you watched Season 8 so here it is: vignette.wikia.nocookie.net/ml… ), but I also think, this name could suit her. Pastel Dash is a name, that could suit with her more pastel-like mane color.
3) I don't have an idea for Fluttershy yet, but perhaps, I will think about it. ^^
