The best advice I have is to make sure your icing is kind of cold. I can only do three or four flours before I find that the icing in the bag has warmed too much. Just stash it in the fridge for two or three minutes and you're good to go

I really don't know how you managed to make such a beautiful rose using frosting but you're not my personal hero! I swear I can't stop staring at it

Great work with the details, from the preview I almost thought it was a real rose... it's simply amazing!

Also great work in capturing this with a photo, the light blue colour is the perfect background to give more attention to your work!

Aw, you're too kind Making the roses involved lots and lots of swearing, which I've decided is some kind of fertilizer. These cupcakes were one of many attempts, and this is the only time I've gotten more than one passable result (I made thirty last night - can I get a wh00t wh00t for progress?!?!)

How did you make the rose? Is it fondant or royal icing?

I used swiss meringue buttercream. I had some trouble with my hands melting it while it was in the piping bag, so I tossed it in the fridge for a minute or so after piping two or three flowers.

Here's Martha's recipe ([link] ) for the buttercream. I think there's too much butter in her recipe, though. If you try it, I'd use five sticks (yeah, I know that's a lot anyway ) instead of 8 and add more if it's not thick enough.

I tend to do it by weight, myself. The standard recipe is 1 part egg whites: 2 parts sugar: three parts butter, but I always go a little less on both the sugar and the butter so it doesn't taste like a mouthful of fat. lol
