By using SIMBL and the ColorfulSidebar plugin .
You will have to relaunch the Finder after installing and every time after turning your computer on. You can work around this by having a startup script do this for you.
Afterwards you can change your icons like in Snow Leopard by using CandyBar or by manually changing the icons in CoreTypes.bundle.

I'm curious, how did you manage to theme the sidebar icons? I though, on Lion, all sidebar icons are masked and thus appear greyscale.
