How does roleplaying as an animal make one a furry?

I didnt really mean roleplaying in the gaming sense, maybe I should rephrase it.

Fine, go and eat a seagull and tell me how you feel. Not all animals are food.

Name one animal that we humans don't eat and use anything from its body to help us, that serves us as of any use?

Not so nasty if you look at it from an alternate evolutionary or Genetically manipulated standpoint (On that subject, we have the technology). Anthropoids would technically be a completely separate species of animal from their quadrupedal, non-anthropoidal analogues. I would think that a Naturalist such as yourself who has indeed drawn alternate species would appreciate such a concept (minus the smut, of course.)

If it were genetically modified, and to a greater extent, if it was naturally evolved, then fine. But such creatures would most likely not fit our cultural standards of attractiveness (unless of course they were engineered to be pretty). I DO appreciate such ideas from a evolutionary or speculative standpoint, but if and when I draw them, they are influenced by more than just what looks attractive, they come from how interesting I want it to be.
I can appreciate anthros from a visual or zoological standpoint, simply not a sexual or cultural one. I also think that a creative process of design benefits from as many steps as possible. With many furries, it seems to be alot like "combine sexy person A, with generic animal B", I tend to generally shy away from human-animal combos, because I find animal-animal combos much more effective. My process will sometimes start with the idea of combining 2 or more creatures, but it also involves thinking about exactly what kind of separate creature it is, and how to make it look natural, less like a classical chimera, and more like a naturally evolved critter.
In short, alternate species are fine, but simply combining animal and human alone isnt enough, make it spicy (in the non-sexual sense).

Alas, the 'Spiciest' parts are the ones you cannot see. If Anthropoids were to be engineered, (I'll get to evolved later), then it would be for a military purpose, to replace Humans on the battlefield in a specific role. Imagine how intimidating a 7'1" snarling wolf-thing with a M249 would be in a closed in firefight.
An anthropoid, I will admit, would be far less likely to evolve naturally in the wild unless the Apes were killed off by some selective event, but would fulfill much the same purpose as Humans do currently.
And as an addendum, why should an Anthro not be attractive (as in the Human part of the form)? There are, after all attractive people, though they are outliers in overall human physique.

I can see the appeal of attractive anthros, by all means, but I am not part of that community, or that fandom/fetish, etc. So I have a hard time understanding this phenomena.

Anthropomorphizing animals to the extent that furries do takes away what makes those animals special in the first place. Turn a T. Rex into an anthro, and you take away its power and majesty. Feeling that animals should resemble humans is very disrespectful to the animals.
