The chalk in the white cliff runs clear through France and many of the wine cellars are dug into it, sometime 5 or 6 stories underground. It provides a stable constant environment for aging wine. most have elevators and in Paris you do not see any gas station either because they are also build under ground because the chalk is soft and easy to work with. (At least this is what I was told on my trip there.)
