The wing piercings are an interesting touch. Not really something that you'd think of in relation to a Paladin, but I think it gives the guy, or gal, some character.

Well, I'd say that depends on the culture of the paladin, maybe such piercing is meant to honor a fallen friend, or to show a commitment to another person (a la engagement ring), etc
Of course in many "average" cultures, a piercing is usually a sign of (mild) revelry, something not very paladin-like.
This kind of details, as you say, give some character to the... well, characters
