I was going after her route before everything changed when the Monikas attacked.

Sayori is likely the most productive route out of all of them. I personally prefer Natsuki, but pursuing Sayori provides a middle road so that Yuri and Natsuki end up as friends and neither of them alienate you. I can't stand the idea of turning people against each other or any other form of treachery or manipulation, so I have to admit that the route that creates the most harmony is the one that most appeals to me, even if I'm not a huge fan of the "childhood friend" trope.
Sayori's route also provides the biggest hints to Monika's true nature, as it develops the most definitive evidence that what's happening isn't the player's fault, while her dialogue and poems are key to the mastermind's identity if you're in the mindset to suspect everything like I was (thanks to that big silly trigger warning). Lastly, Sayori provides closure in the true ending, which is somewhat similar to the true pacifist ending of Undertale, except Sayori's not an asshole like Flowey, so her monologue actually makes the player feel good about themselves.
