Well, they go into what Ford was doing in those thirty years after he got sucked into the portal. It expands upon a lot of stuff, offers explanations that weren't in the show, and deals with plot holes. It's a must have for a fan of Gravity Falls, because it adds a lot to the story.

I also recommend the Gravity Falls graphic novel "Lost Legends" which was released after the show ended. It contains four new Gravity Falls stories that still have the charm and humor of the original series. There's actually quite a lot of post-series content, including implications that a certain dream demon isn't truly dead...

By the way, I suggest checking out a new animated series called The Owl House which very much feels like a successor to Gravity Falls. It might even be connected to Gravity Falls, since I suspect that one of the main characters is actually Stan's ex-wife. It helps that the people who worked on The Owl House had previously worked on Gravity Falls. Even Alex Hirsch is involved as one of the main voice actors.
