Inside the after eight cupcakes. I apologize for the terrible photo, but i wanted to show you the middle. Yesterday it was so sunny and perfect for photos, today it is snowing so i had to use the flash, good old English weather!After Eight Cupcakes: Chocolate sponge with a Mcflurry After Eight chocolate mint sauce center, covered in chocolate ganache made with Mcflurry After Eight chocolate pieces and finished off with some crushed after eight pieces
Made for the staff of Mcdonalds who gave me all their shares of left over After Eight stuff so i could bake them things.

for these i used a box cake mix as i didn't have much time but i do have a lovely chocolate cake recipe that this would work with [link] mix the ingredients as stated, divide into cupcake cases, bake, cool then with a piping bag add a chocolate sauce filling (you can't buy the special after eight mint sauce) then cover with melted chocolate

not this one as i used a cake mix for a change as i was in a hurry, always have one around the house for emergencies but i do have a chocolate cake recipe on here which my friend is forever using since she saw it [link]
After baking and cooled inject the center with a piping bag filled with a sauce of your choice and then cover with ganache (100g of semi sweet and 100g heavy cream melted together in a pan for a few minutes)
if you are used to measuring in cups i found a website which may help you convert to measurements [link]

There are just no words for how good this looks - kind of like a lava cake. 
Also, do you know of any other place to find those "After Eights"? I've never heard of them, and our local McDonalds says they don't carry them. They look delicious~

did you scoop out the middle after baking or put the chocolate it before baking??

i was going to scoop it out but i just stuck in the piping bag nozzle into the top and it went in fine so no messing around or wasting cake required
