Though humans are already doing a swell job on destroying the Earth,Demeter could END IT ALL since humans rely on nature for resources.And if Nature is dead,everyone would be dead as time would go by and everything will eventually be extinct.

Then there are the deities that aren't just limited to nature or whatever powers they have. Those guys make the Oof levels transcend into other dimensions.

Even if Demeter could cause the apocalypse instead of winter like in her original version, some life would survive. You have to understand, as a biologist I know the resilience of life more than most.
There exist tardigrads, which could in theory survive a total nuclear war and be perfectly content. There are extremophile bacterias, which can survive in the harshest of winters than to literal antifreeze proteins as well as inside sulfuric vents and inside volcanos. We actually use that last one a lot because its thermophillic protiens are useful.
Point is, life is a lot more resilient that people give it credit for. Don’t forget that there have been five times before the current era in which life as we know it nearly went extinct... but bounced back every time. Sure, humans will probably die off given a catastophic event of your choosing, but life tends to find ways to live.
