Do potential employers like to see fanart? I would hope so, but are there any legal kerfuffles involved with that?

Employers really don't care much for 'fan art' that is the label has some mixed persecutions. It's better to treat your art as art. For example, this image is a character sheet 'I made' of well know character, as a young adult, in my own style, that can be used for animation or comics pre production.
Approach all your work as serious pieces of Art, but try to have a few pieces that are original to show you have ideas of you own.
