This occurs when approaching the speed of sound. Airshow subsonic (just below the speed of sound) passes are what generate this phenomenon. Similar but smaller vapor trails can be seen in high-G maneuvers as well. Here's an article that best describes it, at least better than I can:

Interesting geometry on the Super hornets.
looks almost like a F-15 strike eagle.

They're fairly similar. A distinguishing characteristic of the Super Hornet compared to the Hornet is the squared-off intakes as opposed to the rounded-off ones on a C/D model Hornet.
