IR photography has such weird effects. I can never predict what it will look like, though I have a rough idea that cold objects are dark and warm objects are light.

Well, it doesn't have enything to do with temperature. Infrared photography isn't thermal imaging.
If you use IR film and an IR filter, the things that reflect infrared light, like green plants, will appear white. At the same time, things that apsorb it, will be black. With digital photography, colour is invloved because we often use filters that let through a little bit of visible light, and that is used in postprocessing to get that weird look
