grass is from the sfm workshop. I just pulled the files from my sfm directory into my gmod directory.
Don't have a tutorial for building scenes. I just put things in front of the camera until I'm satisfied.

Oof. Yeahhh unfortunately it looks like the problem with the textures looking crazy is probably a skinning issue more than the textures themselves. That'd take a lot of work to fix up properly.
