Nice name for the flying one "Galeon" the other one that I have seen that is good for the flying eevee evolve name is Aveon/Avieon (Avian-eon). I always imagine the flying eevee have feathers on it's ears and be sort of like a griffen mix.

Galeon somehow reminds me of the design of the Winds from Wind Waker; like it's made of the wind itself, but somehow still seperate from it.

You could make a series of Drak eveelutions, like you did the dark starters.
I don't see anything wrong with a dark/dark eeveelution, and the eevees are highly prone to mutation, so its got logic to it as well.
