From what I can figure out these are the reasons why this ship is so popular:
1. Theyβve been around a long time. Iβve seen fanart of Soarindash from all the way back in 2011, and even a handful from 2010. The fandom has had 8 years for hundreds or even thousands of people to make tons of artwork.
2. Their color palettes are gorgeous. Three shades of blue and rainbow look really good together. Iβve even made several art projects based on that color scheme and they come out looking beautiful.
3. The show keeps hinting at it. Even in season one people were shipping these two together, and the ship only got more popular over time. The show writers caught on and they kept dropping hints, which caused people to draw more, and the cycle repeated.
4. Unlike several other ships (cough cough fluttermac cough cough), itβs actually plausible. They get along well and now spend even more time together since dash is a wonderbolt. Thereβs plenty of time for a friendship or relationship to form, and I hope they do that before the end of season 9.

I've only been a fan of the show for a little more than a year now, but I've caught on to recognizing the Soarin-Dash "shipping" thing for quite some time since then. People keep coming back to putting these two ponies together, which does make me wonder if there really is something endearing between these two characters being together. I will concede that your observation of their shared color palettes is an astute observation - they do look well together!

The color palettes are just something you notice after spending god-only-knows-how many-hours drawing pictures of them together.
Part of my coloring style is to use the same hex codes every time, even though lately Iβve been trying out different brushes.
I like it so much I spent 3 months painting (real paint, not digital) a really complicated mandala/flower thing based on those colors. Took forever but I love how it ended up.
