Reminds me of the trick I use for white hair in my renders to make it look, well, white: the base may be white, but the specular reflection color is usually some shade of dusty blue.

Yes! You learn to imply white ... or whatever color. To use actual white just wouldn't work. It'd look too phony, ime. I once saw a photo of a "black" raven, which, because of the lighting, was actually mostly golden brown. But you still knew it was a black raven.

I enjoy using dark blues and purples to imply black.

I hear ya! When painting, I never use black: I mix a combination of burnt umber and ultramarine blue.
