Shuichi is more of a cake roll than a sushi roll, in my opinion. Though, that's a biased opinion since I don't like sushi unless it's salmon or tuna. Something about the nori that makes it taste like only vinegar.
But yes, Shuichi is one of the best characters in that game. He's definitely an iconic Danganronpa character. The only thing that ticked me off about the game is that Tsumugi stated that the events of the previous three games never happened. A thing a friend and I came up with to soothe our consciousnesses is say that Tsumugi made it up to go along with her setting.

ahaha well Sushi was just a nickname me and my sister ended up with after we struggled pronouncing his name the first time we saw him in the demo XD we pretended that he introduced himself and then Kaede just said "sh... sush... Oh you're name's Sushi! Got it, Sushi!" and he was like "Ah, no.. um okay sure..." XD (made me salty that Kaito didn't nickname him Sushi Roll alongside Maki roll) But I agree, definitely a cute little cake roll! ahah and I'm kind of the same honestly, for some reason there are only a few types of Sushi that I tend to enjoy XD (Shuichi being one of them >w>> ahaha)
Honestly I loved the entire cast, they were all great, even if I wasn't a huge fan of Miu's crudeness, I think all of them were amazing, and Shuichi has quickly become one of my favourite characters of all time XD
And as for that, they did mention that this game was a spin off, and that it doesn't fall into the canon of the previous two games. And if anything, we know the games are fiction already, but that doesn't mean it was all for nothing you know? I think by giving us that shock factor, it puts us in the same kind of mood as the protagonists at that point, because the games were more to us than just a "lie" as they said, even if they are fiction. Because really, that's what they are isn't it? And then as they fight back, we also fight back because the games still left an impact on us you know? I like to think it was simply cannon within the third game's setting, and you're right she might have made it up after all! XD But I really enjoyed the ending, I think it highlights how much games mean to me, because I've thought about it before and I agree with that even though none of it technically ever happened, I still played the game and went through real emotions while playing it, and in the end it left a real impact on me. aaaa I just really really loved that ending XD
Even I'm sure that this isn't the case, if there isn't a single Danganronpa game after this I would still be completely satisfied ahaha

It was an impactful ending, especially that even a small number of people, let alone a single individual, can make a difference.
