He does sell variant pieces, but I think it's dependent on the rarity and what variants/variant pieces you have missing.

For me, he had some classic items on sale. And one of them was a bling version of the Potato Mine: Pizzazzling Potato Mine!
There are some new abilities for some of the characters - some are bling versions while others are actual differently-functioning abilities.

I already got all Legendaries (except Party Zombies) prior to this update. Glad to see there'll be more to collect, and that'll be all the more easier with buyable hats.
However, recently was a missed opportunity because having Rux make another appearance would've been great, but we don't know when his next appearance will be.
Rose's reaction at the end of the Trials of Gnomus trailer perfectly summed up my reaction - I was shocked at how much insanity was put into that trailer.

But now recently I got all Party Zombies thanks to the Infinity Sticker Pack. I'm glad that sticker pack was made, because nobody likes to grind for an eternity to get all party characters and Infinity/Scrumptious items.
I now, technically speaking, have ALL Legendaries from pre-Trials of Gnomus. Feels so good! And now there's more to collect!

Gomus desperately clings to the edge of the cliff. Below him, a pit of paradoxes and entropy, swallowing whatever's inside. Looking up at his last hope, Gomus' eyes widen as he sees his brother, Rux towering before him.
"Rux!" He cries, desperate for rescue.
"Brother, Help me!"
Rux says nothing. He glares down at his brother.Β
He violently grabs his hands, the golden claws he made digging into the king's porcelain hands. He looks soon the former king with a sly smile.Β
Looking into his eyes, he says, with malice dripping from his voice...
"long live the king"
...as he throws him of the ledge, Rose watching from her crystal ball in horror.
