Firstly, big buff Undyne is BEST UNDYNE
Secondly I can sorta see why they don't know each other in Deltarune since in the Underground, they were both in high positions that made it sensible for them to at least see each other and get to know one another on an acquaintance level, but since Alphys is a teacher and Undyne seems to be a regular beat cop/sheriff, they might not have any reason to cross paths?
But imagine after Kris mentions Alphys to Undyne, Undyne goes around asking about who that is out of curiosity and they meet and it is 'oh no she's cute' at first sight for both of 'em?

idk it's a small town so I was surprised they hadn't at least seen each other, but at the same time alphys does kinda seclude herself so ;o;
neither of their professions make sense for them personality-wise imo I feel bad for alphys bc being shy makes it hell for u to be a teacher
