The west could be pretty wild in those days; also, the nearest grocery store could be quite some distance away and as likely as not their meat supply was still 'on the hoof' and not inclined to come to would-be predators willingly!

Another reason I once heard mentioned why the west was wild was former federals and confederates moving west, getting mixed together and 'fighting the Civil War' all over again.

Further north, a great many veterans with nowhere to go and nothing to go home to went to work building the transcontinental railroad. It's been said that they were instrumental in pushing the tracks east to west. They were accustomed to working in teams or units, with a "sergeant" in charge, and endured harsh conditions without much complaint. They worked hard and played hard in the hell-towns that followed the end of track.
