Wow... I'd never thought I'd say those exact words like that ever again. Anyway, welcome to Canterlot High, I'm principal of the school, Ms. Shimmer.(Based on a supposed deleted scene from the MLP finale where Sunset would return to Equestria and mention how in the future, she's now the principal of CHS.)

It's in the original script, which people were able to read with the Hasbro content leak.
The original script for The Final Problem had Princess Twilight say she had an arrangement to meet with an old Friend of hers, which would be revealed to be Sunset Shimmer. She tells Princess Twilight that she is now the Principal of Canterlot High and that she was originally struggling with the workload until she organized a student council, and the students were helping her run the school. This was going to be what gave Princess Twilight the idea to form her own Friendship Council.

I was just thinking about this the other day!Β I could see this being her end goal.Β Not only does it allow her to continue to watch over the portal to Equestria, she also gets to succeed her Celestia and kinda bring things full circle.Β

Agreed. Honestly, given how well-received she is as a character, said deleted scene supposedly still around to work with and ECG deserving a decent ending, I think it would be best if the series ended with Sunset taking up the position as Principal.Β
And like you said, it brings her full circle. She goes from school bully, to school's mentor and protector. From fugitive who used the Portal for selfish reasons, to a guardian of powers beyond the human world's knowledge.Β
And if for nothing else, if THIS is what adult Sunset was roughly supposed to look like in the ending, I see no reason to abandon such a fine design.Β

Curious where you heard about this deleted scene cause I did ask Jim Miller over on Twitter if they had plans to include Sunset in some way in the finale and he said they didn't since she was original to EG and he was going to let their crew handle her.Β

I bet that in the Canterlot High world, Sci-Twi would either be vice principal or a science teacher, Pinkie would be a Home Economics (cooking) teacher, Applejack would be a Woodshop teacher, Rarity would be either a Home Economics (sewing) teacher or an art teacher, Rainbow Dash would be a gym teacher, and Fluttershy would be the guidance counselor!
