Description This video shows how watercolor paints behave on different types of palettes. You can see folding metal, folding plastic and porcelain palette (plate). There is big difference depending on the surface on which you mix your watercolor washes. The best surface for watercolor is porcelain. You don't have to buy new expensive porcelain palette. Regular dinner plate is as good as expensive palettes.

With palettes like the ones you featured, is it common practice to fill up the wells with paint?

Well, it really depends on the particular painter. Some people like to have the wells filled up with paint, some don't. It really depends. If someone likes to work with moist paint, with creamy consistency, then they squeeze out a little bit of paint and they know they will use it with one painting. But as far as I know the majority of watercolor painters who have palettes with wells prefer to have their wells filled up to the edges, because watercolor paints, if they become dry, can be moist again and use over and over. I always try to fill up my wells, unless I don't have so much paint
