her old one is not gone, after all she likes her head shaven more then anything, its just when she first comes in that she will look like this, as well as later on in the later arks.
and she's always had eyes, she just used her powers to keep them hidden

her eyes do look awesome though, why does she keep them hidden?

well when hidden she sees the normal red blue yellow color spectrum, however when exposed she picks up 20X more color receptors then us humans, she sees colors we couldn't even imagine, but it makes it difficult for her to be able to explain why a leaf isn't just green, so its easier to just stay in that lower color spectrum.
