Actually, I'm pretty sure they didn't evolve it. Back on Viscosa (their home planet) they could function fine without it, but on other planets it was a problem. The Omnitrix is capable of generating extra components to keep all the different forms possible, so it supplied the gravitation disk. (It's 100% confirmed that it would be possible for the watch to supply Ben with oxygen if it needed to, but he just hasn't figured out how to make it do that.)
Of course, this is just a theory that I need to get checked out with Dwayne McDuffie. But I also think that it would be rather stupid if the UFO is biological. >.<
Anyway, I'm gonna stop randomly commenting now.
