Really, it's all about marketing and selling merchandise. Where we as adults and young adults are fine with Merida as she is, children are the biggest consumers of the toys and merchandising that is made. So it needs to appeal to them. 90% of the pictures and dolls here are from outside companies (such as Mattel) that Disney hires to make their merch. So they do with Merida what they think will sell.
As for the illustrations on the bottom left and right corners, those are created by the Disney corporation directly. What they are doing here is trying to tie in the original design of Merida with the dress she wears at the parks (parksandresorts.wdpromedia.com… .

The bottom line to marketers isn't about her being a good or bad example. It's about selling merchandise. It's about moving product and supplying what the buyers will consume. I work at The Disney Store and I will tell you that the "pretty" Merida sells better. I don't agree with it, but it's really not the worst one. In my opinion, the fact that they are white washing the ethnic princesses and changed Cinderella's face are much worse.

technically, the only dress merida hated was the one that was too tight/restrictive and had to cover her hair.

but then we see her the rest of the movie wearing a different dress. instead of going into the cliche- "she dresses like a boy" thing.

I think merida is the kind of girl who while dresses not being her favorite thing, she doesn't hate it- she just hates them when they're stuffy
