The greenish coloring was for black and white filming. On monochromatic film, their skin would read as deathly pale. It was never intended that they'd actually be green.

Ah. & Frankenstein's monster's skin color just worked its way into popular culture. In the original stories, the Bride was supposed to have been created without piecing her together from female cadaver parts. I don't think that made it into the movies - It's been a while since I've seen " The Bride of Frankenstein ".
