The background just looks a bit weird though because the trees are sharp but everything has this fuzzy/blurry look to it.

Hmm... I'd say this is the best humanization of that scene I've seen. The smooth lines, the equally smooth shading, the right shape and proportions of the face. Nothing looks off to me, everything works very well with the "Fluttershy as a human with all the same features as her pony self" idea. Even the background is a great stylization of how the show vectors look. Well done.
