These guys are awesome!
I can tell he's definitely after a lugworm or something--there's the sand pellets those worms eject from their burrows just to the side of where the fish is aiming. ^w^ Like the underwater equivalent of getting a freeze-frame of a bird snatching an insect.

But what does he see under there..? ;D Wonderful photo! I love these fish, if not for their cool shape then for their unique name.

Food! Worms, shrimps, crabs, clams, ... In this picture, the permit is a moment before getting whatever was there.

Oh! That's really interesting actually. So do they truly see beneath the sand or do they look for clues of animals having dug into the sand?

Perhaps, both. Clues are certainly important. But some animals also sense electrical activities of living organisms beneath the sand. I do not know if permits are among them, but rays for example are. In addition to this, they see light frequencies different from what we see and in those frequencies the sand disturbances or things just covered with a layer of sand might be more visible.

Oh yes, I recently read about fish being able to see polarized light underwater, something that humans apparently can't. I was really fascinated, I had never heard of it. The article also said it influenced the way fish look, and why silvery fish can be so well camouflaged because their skin reflects the polarized light in a certain way. Maybe it aids in seeing recently disturbed pieces of sand as well.
