I'm a bit late to Brian Engh's party, but here's my contribution: giant 'ground sloth' penguin. I'm calling it 'the colossus penguin', since it can participate in staring competitions with giraffes - or at least it could, had it not outcompeted them and wiped them out. What a bastard. But, y' know, all's fair in love and ecosystems.

Out goes the starkly-contrasting black-and-white countershading of regular penguins, to be replaced with a more-drab colouration - not too dissimilar to that of thrushes. The wings are greatly reduced since they're no longer used in locomotion. The neck is longer than in its aquatic cousins, allowing it to reach into the foliage of acacias and other trees. A large torso houses a long gut which breaks down the tough plant material on which the colossus penguin exclusively feeds.
