Polysexuals are attracted to MULTIPLE (poly meaning "many") sexes / genders, but not all. Pansexuals are attracted to ALL (pan meaning "all"). Knowledge of basic Latin prefixes will help in understanding.
A simple way to visualize that is to think "As a polysexual I am attracted to females, males, and transwomen, but not transmen, intersexed, or fluids." vs. "As a pansexual I love all sexes and genders including females, males, transwomen, transmen, genderfluids, intersexed, asexuals/agendered, etc.".
Many people don't understand prefixes or don't care to encourage the difference between the two, some people just like the one term over the other.
*The attraction to multiple persons at the same time is "polygamy" or "polyamory".
