If you've got the electronic knowledge, you could probably hook up a couple of nice Roland keyboards behind the scenes, wired to the stops and the keyboards and the presets.

aye, it would be quite the task wouldn't it, not beyond possibility but beyond my expertise. it would be sweet to hook this baby up to my MC-505 and Reason synths though...

Then put gold-plated plastic tubing in place of pipes.

Look around, there's often electronics geeks who like to do things like that. It's the sort of thing my brother would have done when he was younger.
