Whenever I compare the two, Alduin looks "younger" than Paarthurnax (as far as immortal dragons go) and it makes sense. Alduin was shunted forward in time and is essentially a god, even by dragon standards. Helps that he was first that Akatosh created. I'm of the mind that Alduin was being arrogant in his claim to maintain his power over other dragons and yet, being truthful at the same time.Β
Paathurnax, the younger, took the long road and aged along the way in the form of broken horns and spikes. Even the spikes covering his jawline evoke the image of an old man.

I have never seen paarthurnax's face on the side because whenever I go up to him he always turns his head to face me!

One of my headcanons is that he had a battle with Durnehviir, who used to fight other dragons for control over the sky.

It actually gives you a visual insight to how they both differ as well as how the game explains how Paarthurnax is peaceful (well, in the game after he was a bad dragon :T) in comparison to Alduin.
