I'd like to say something regarding the massive amount of Undertale / Sans AUs. 
Alternate Universes are things fandoms love to conjure up. Its what gives them creative freedom and ideas, people love alternate universes. 
But for others I guess they get overwhelmed or confused by how crazy off story some of the alternate universes can get....? (and consider these things cringey? Despite the fact that people ....for the most part.....are just having fun?) 
Sure, there's plenty of AUs out there that people would disagree with or straight up dislike and that's fine. Some people just straight up don't like how massive produced they are. 
But a franchise that delves into alternate realities canon in itself is bound to create AUs upon AUs, it gets ridiculously complex with crossovers. 
Its still very fun though!

The most popular AUs for Sans in Undertale are intriguing alternate explorations of Sans' character.
Keep in mind, fandom Sans vs Canon Sans can be very different interpretations. Most people (....including me, guilty as charged) see him as a Martyr, or rather, an intriguing monster with OP abilities that only uses them if all hope is lost. A laid back, depressed guy who hangs heavily on his brother's optimism, and his good friend Toriel's emotional support / joke buddy. 
Now these are parts of his character, they're not WRONG, but a lot of people forget that Sans is also kinda gross sometimes. He makes really dumb puns and childish jokes. He gets on people's nerves on purpose sometimes, tricks them. Even stalks you. His bedroom is nasty, full of grease and garbage. Straight up drinks ketchup. He's weird like that.
There's a lot of portions of his character though that people hyperfocus on. Its well known a character's full personality can get lost or changed in a fandom. But regardless, its unique to see people's different interpretations none the less, and bonus points if they make their version complex too. 


Underswap deals with characters from Undertale that ironically most of them have a counterpart for. Switching roles with their foils is quite interesting. 
Underfell is made fun of for being "edgy", but Undertale monsters are known to be generally kind. Here, its flopped. These monsters actually are /monsters/. To see a human change their minds with a kind mercy route is quite sweet. 
Outertale is just Undertale but in space. Sans appears to love stars and space, so its nice to have an AU where he's constantly surrounded by it. 
There's others, like Horrortale, Handplates, Overtale, Aftertale, Dancetale, ect... some have significantly larger changes to canon story than others, but they're all still very interesting pieces in the Undertale fandom multiverse. 

Ink and Error are unique representations of this fandom phenomenon in action. Ink representing people's desire to create alternate universes, and Error representing the people that think its cringey and want people to stop. 
But aside from that baseline of characterization, people have given these characters more thought. 
Ink and Error are soulless Sanses. Ink acts more soulful because he... drinks(??) his soul-ink vials strapped to his chest. Error on the other hand feels a thrill when he destroys. 
These two still feel a sense of loneliness despite their opposite thinking. 
They really only have each other in a way. They don't have their own Papyrus to help them out or bring their hopes up. 
So its intriguing to note these two are indeed soulless....and as Undertale taught us with Chara and Frisk, you have two options: FIGHT, or MERCY. 
And anyone and everything, is capable of doing either. 
Like Flowey says, one day, you will get bored, and decide to try something "new".

I like the way you put it when talking about the many Undertale AUs. It can get pretty overwhelming sometimes, especially with how many sans-centric universes there are out there, but I think the most important part of making an AU, no matter how silly and outlandish it may seem, no matter which characters are the main focus, is that whoever makes it has a lot of fun doing it. 

That's probably the biggest rule of creating an AU. Have fun with it. If you have fun making it, your audience will enjoy immersing themselves in it.
