Dax is the symbiote. It's like a worm that lives inside of Jadzia. The character Jadzia dies towards the end of the Deep Space Nine and the symbiote is put inside of Ezri (making her Ezri Dax). One of the previous hosts of Dax was Curzon... a male Klingon!
