I know when I've been looking at fan art of Vitani from 'The Lion King 2: Simba's Pride', I'm sure her eyes are really blue.And when she appears on 'The Lion Guard', her eyes are mistakenly colored purple, not blue.
Seeing her eyes as blue is mentioned on this link, Vitani - Disney Wiki - Wikia, under appearance.

Her eyes are purple in the outlands due to the bright, sunset like colors. The fire scene in The Lion King II, is the only time Vitani’s real colors is shown, to my knowledge.
