My knowledge of animation is little, I was an animation/illustration major for a year then switched to just illustration so I don't know a lot, but I THINK
when animating a walk cycle there's an up and down movement to the main body that's mirrored in the head/ears/tail but inverted so as the main bulk goes down the secondary motion of the extremities appears to go up

Actually I just did some reading on that and that sounds right! XD I'll definately be keeping that in mind

to answer your question bout head movement, it pretty much remains static like the rest of the body... Β
maybe a little more up/down movement to give it an organic appeal...Β Β
try studying the movement of wildcats, might help a bitΒ
