I Bet he'd be like Saitama; really bored about not having anyone strong enough to fight him. . .

I see that happening, but here's an alternative: Things would continue as in the original story with Buu reincarnating in Uub, all the Earthlings having the memories of the Buu Arc erased and time would pass until Beerus awakening. The Battle of Gods' story would remain the same until the climax of Goku's fight with Beerus, having lost the Super Saiyan God form and being pushed down to Earth, but like in the movie and show, he regains control over his God Ki. However, in this timeline he also gains access to Ultra Instinct and giving Beerus a more tougher fight, although Goku would eventually lose the control over that technique and still be defeated by Beerus, who in this timeline would be much more impressed.
What do you think?

Much better than I'd have thought; at least when it got as far as you've suggested. . . I was thinking like how boring things would be for him being OP and Unable to enjoy a nice elongated fight; being frustrated and bored with each fight since he'd be OP, in the same way Saitama was. . . I Mean; from the Frieza saga to the end of the Cell Saga[btw, When during the events of the cell saga did Goku & Chichi have the chance to procreate and make Goten in her womb, before he sacrificed himself and went to Other World; He couldn't have done it with her when he was in OTHER WORLD, So yeah, Goten's birth is one of the Many DBZ mysteries some fans(like me) have been trying to figure out for a while; and I still don't think it's been solved yet. . .]; I'm sure he'd be really unhappy being unable to enjoy a fight, since nobody could even come close to challenging him enough to make an enjoyable fight that would last long enough to sate his saiyan battle-lust. . .

I wanted to see what if that happened during the frieza saga. Frieza would definitely be capable of pushing back the spirit bomb if he used his full power.

Then Goku would easily take care of the Androids, Cell, Buu and almost any other enemy in the future.

Yeah, Buu would still be killed, although from a Kamehameha.

I would imagine that Goku's base power would increase substantially past the level of SSJ3 that we saw him use against Kid Buu. Afterwards everything from the Battle of Gods arc would be a little different. Goku's base power increase would mean that he would put up a much better fight against Beerus both before and after the god ritual, though he'd probably still lose.
His training under Whis would probably be slightly easier, since Goku tapped into Ultra Instinct the first time, though he would have trouble on figuring out how to get back into that state.
