Because fluff, that's why.
I keep imagining that baby griffons are born with soft kitten fur, and temporary spots, and soft eagle down once they are born/hatched/spawned/whatever.
And so, fluffy Gilda was born! I love Gilda, she is my favorite non-pony character in the show.
