It was said that The Beast is a representation of Death or the Grim Reaper since the Unknown is the realm between life and death.

No. They didn't know they're in limbo. Wirt and Greg didn't now they're dying. So if they give in to The Best, they will die but if they fight back they will find a way home or know where to go next which was going back to their body and live. You can say they were spirit lost in the Unknown. All the other characters there including Beatrice are spirits of the dead.
